The old method of recording to VHS video cassettes has now been superceded with the introduction of the Digital Video Recorder (DVR) with built in hard-drive recording facility. DVR's can link to a traditional Video or a PC enabling you to copy out the evidence. They also control the images from multiple cameras, where as before an expensive Multiplexor was required.
With a DVR, the recording can be programmed to either stop once the disc is full or to loop and start recording over the oldest data, so that you can always retain the latest pre-determined period of time, depending on the size of the disk (80Gb, 120Gb, 250Gb, and so on).
Thanks to IP (internet based) technology, it is now possible to monitor a site from anywhere on the planet.
